" I believe that my generation is full of change-makers. We are full of energy and ambition to see our goals come to fruition. While we each will be igniting change in our own way amongst our own communities, our missions' will collide to make a big impact. This ripple effect will have positive lasting effects. I am so excited and honored to be apart of a community where this global connection is at the forefront of our ideas. "

Millennium Fellowship Project: Reinventing Leftovers

This project is about combating food waste and addressing food insecurity in our society. Laura will be looking to work with university systems and schools to measure food waste and reuse in their dining facilities. The project will then look to create a program where leftover food at the end of the week can be packaged into to-go meals for members of the community who may not have the means to procure meals. This program will also include an educational component and pull on students to package and deliver the meals to drop off zones. Due to the current circumstances around the pandemic, and social distancing guidelines, the main measurable goal within August-December will be to create a food use and misuse inventory to understand where food waste is occurring as well as collection demographical information from the local community about what areas may be benefactors to the Reinventing Leftovers program.
