Millennium Fellowship Project: Food Insecurity and Dietary Restrictions

The name of my project is Food Insecurity and Dietary restriction. Food insecurity is an issue that creates several challenges for individuals, including eating disorders, loss of productivity, reduced ability to learn, and impact on other aspects of life. While food insecurity tends to come from poverty, unemployment, or lack of available food, dietary restrictions can also lead to food insecurity in places where food is plentiful. Dietary restrictions from allergies, cultural, and religious belief systems, and lifestyle choices can prevent access to food resulting in food insecurity. For example, Halal requires believers to follow certain guidelines when eating. People with halal dietary restrictions avoid pork, alcohol, and dead animals, and only eat meals that are prepared according to Islamic law. My project consists of a self-perception survey to better understand individuals' dietary requirements, knowledge about halal, access to individuals’ perceptions regarding nationwide and internal food insecurity, and the effect of skipping meals due to a lack of reliable food options on academic performance, professional work, and mental health. Through this project, I hope to help our campus dining to implement halal food on campus and alleviate the issue of other dietary restrictions like vegan, vegetarian, pescatarian, kosher, and allergens.
