Millennium Fellowship Project: Traced Waste at NYU Shanghai
Project Description: Reduce NYUSH’s daily food waste and create a long-term, more sustainable food system that incentivizes people to waste less food and repurpose food scraps for compost.
Objectives:
Inform students, faculty, and staff about how much food is wasted in NYUSH and aim to reduce NYUSH’s daily food waste.
Create an effective system that repurposes the cafeteria’s compostable food waste scraps for the Urban Farming Club’s compost.
Create a Food Waste Club that promotes the development of new ideas to address food waste at NYUSH and ensures a solid administrative structure that facilitates the continuation of the project in the long term.
About the Millennium Fellow
Hideko Mitani Shen is a third-year student at NYUSH pursuing an interdisciplinary major in Political Science and Environmental Studies with a minor in Global China Studies. Hideko is interested in exploring intersectional solutions to address the climate crisis, which disproportionately affects developing countries, women, marginalized groups, and minorities. With her project, Hideko hopes to inspire individuals to learn more about the effects of climate change on Global South countries and reframe the discourse of climate change to include the representation of the voices of communities whose opinions have been overlooked.
