United Nations Academic Impact and MCN are proud to partner on the Millennium Fellowship. This year, 52,000+ young leaders applied to join the Class of 2024 on 6,000+ campuses across 170 nations. 280+ campuses worldwide (just 5%) were selected to host the 4,000+ Millennium Fellows.

Millennium Fellowship Project: Food Security

I am working on a snack bar development/formulation using green banana flour and chia seeds. My project is aimed at utilizing green bananas that are widely grown in rural parts of Kenya and come up with a snack bar for consumption, which is easily going. It will be highly nutrious as I incorporate chia seeds and add flavors like coconut to flavour it.

About the Millennium Fellow

Everlyne Kathure Mung'athia is a very smart, ambitious, industrious, hardworking lady. She is currently heading to her fourth year of study at the prestigious University of Nairobi pursuing her undergrad course BSc in food science and technology. She was born and raised in Mombasa later moved to Meru her passion and dedication for education has driven her to be able to explore different parts of the country as at now residing in the capital of Kenya. As a food science student, she is enthusiastic about the world of food and the endless possibilities it offers. Her passion lies in exploring the science behind food and using that knowledge to develop new, exciting products that can positively impact the industry. Her leadership potential has been exhibited throughout her campus life, by working with AYLF executing campus projects for the club, interacting with other leaders, learning from parliamentary visits and attending national occassions which has raised her confidence creating strong leadership foundation that she aspires to lead even in future in pursuit of excellence. Everlyne has a goal to innovate and contribute to the field by creating sustainable and healthy food options that can benefit society as a whole ,in conjunction with the UN sustainable development goals, her aim is to make a social impact and the world a better place.
