ABOUT THE MILLENNIUM FELLOWSHIP - CLASS OF 2025

United Nations Academic Impact and MCN are proud to partner on the Millennium Fellowship. This year, 60,000+ young leaders applied to join the Class of 2025 on 7,000+ campuses across 170 nations. 290+ campuses worldwide (less than 5%) were selected to host the 4,500+ Millennium Fellows.

On top of that, the skills I gain from the Millennium Fellowship will allow me to build a base for creating social impact while maintaining the core principles of the UNAI and SDGs. "

Millennium Fellowship Project: Waste Less, Eat Better

I want to help college students by showing them that they can buy healthier food on a budget while reducing their waste. Through weekly social media posts and presenting at Pace University wellness and social justice events my hope is to inform my fellow classmates. Many of us move away for college with no knowledge on how to shop for basic food needs so we often overspend and a lot of the time it is on foods that are the less nutritious. On top of that college campuses are known to be big producers of food waste. My goal is to make a positive difference using primarily TikTok and Instagram pages that are dedicated to posting low budget meal ideas and grocery lists that can be used by any college student that is on a fixed income. I also plan to utilize time during my university’s social justice week and wellness Wednesday events to spread my message about the impact that food insecurity has on college students and the food waste issue that affects so many college campuses. This time would also be an opportunity for me to listen to other students about their food and budget needs.

About the Millennium Fellow

Rachel Parker is an enthusiastic and adaptable young student at Pace University. Her time there has been spent studying communications, but more recently she’s found herself interested in law and politics. While born and raised in New York, she carries with her a passion for travel and a drive to make an impact on the world around her, which is sure to take her far. Rachel is a strong advocate for social justice, frequently engaging in conversations with people of all different backgrounds. Her hope is to continue these conversations and become a professional that uses her voice for change.
