" "Being a fellow means I can learn from the fellows worldwide about wisdom in the new century, how to deal with the current and ever-changing world issues, refresh my knowledge regularly can help me be more flexible; and I can have stronger influence using this wonderful opportunity to make my project more down-to-earth and attract more people to the sustainable trend. This helps achieving SDG 17---partnership, which I believe is essential to create
a more harmonized, justified, equal and beautiful world." "

Millennium Fellowship Project: Sustainable Eating

So, my project is all about promoting health, well-being, and climate action through food choices. I've noticed that a lot of our schoolmates prefer takeouts over eating in the cafeteria. This isn't just less healthy, but it also leads to more plastic waste and greenhouse gas emissions. To raise awareness about "sustainable eating," I've organized SDG campaigns on campus twice this semester. These campaigns educate people about the Sustainable Development Goals (SDGs) and encourage following the food pyramid through interactive plate games and offering sustainable, healthy food options. I'm planning more initiatives on campus to make these goals more practical. For the "more eating in the cafeteria" part, I want to work with the school cafeteria to encourage dining in by offering rewards and providing nutritional information for each dish. For "less takeouts," I'm planning workshops to redesign takeout bags into reusable shopping bags and offer cafeteria coupons to students who dine in more often. This way, people can experience a healthier lifestyle and become more interested in sustainability.

About the Millennium Fellow

Bingxin Xi (Jenny) is a sophomore at New York University Shanghai, majoring in Data Science, passionate about Geography, Environmental Science, and Sustainability. She cares about climate change and people's health, also enjoys exploring the intersection of spatial data analysis and environmental challenges. Her recent research explores urban ventilation corridors and heat risk mitigation. She will be leading a "Sustainable Eating" project, aiming to promote a healthier and more eco-friendly diet on campus by implementing nutrition labels and reward programs, while also reducing plastic waste from takeouts. She hopes to build a more sustainable future where people can connect more deeply with nature and experience genuine happiness in their daily lives.
