Millennium Fellowship Project: Reduction of Post Harvest Losses
My project focuses on producing locally made red wine from our indigenous fruits to reduce post-harvest losses. We produce both alcoholic and non-alcoholic versions of the wine. My target audience includes adults of legal drinking age, health-conscious consumers, and hospitality businesses such as restaurants, hostels, and event organizers who purchase in bulk.
During the Millennium Fellowship, the project successfully promoted value addition and local entrepreneurship by transforming locally available fruits into natural red wine. Our goal was to reduce fruit wastage while empowering youth and women with basic skills in fruit processing. We organized two practical training sessions where participants learned natural fermentation, hygiene standards, and packaging techniques. Over 40 participants were directly trained, and several others were indirectly reached through social media campaigns focused on food transformation and local business creation.
About the Millennium Fellow
Kouti Céleste is an intelligent,young and globally competitive food science and technology student,at the University of Buea.She was born in Cameroon,resides in Buea and is currently Studying in Buea Cameroon a town of opportunities.For as long as she could remember,Kouti has always been passionate about her advocacies for processing,and the reduction of poverty and hungering her community.This drive and ardour translate d it self from koutice experience in her community and her continuous dedication to social action.Throughout her high school year and currently in her college years, she has successfully been partying in various philanthropic projects and training which through her outstanding leadership,she plants to continue in the future,Kouti aspires to be in a professional field where she can cultivate these advocacies further and provide her own contribution in the development of the united Nations sustainable Goals.
