" "I strive to become a mentor and example for future generations of female Muslims and to ensure they have proper representation in their educational institutions. In order to feel welcomed among their campuses, creation of more diverse meal plans needs to take place to benefit students' health. With the help of Millennium Fellowship I will be able to research and create options to expand the food networks on college campuses not only for Muslims, but all students with dietary restrictions. Through this joruney, I am excited to become a role model for younger Muslim girls to show the large impact we can make in the health and educational industry." "

Millennium Fellowship Project: The Food Options Project

My project is working towards increasing the amount of food options available for people who have dietary restrictions on college campuses. There are many students including myself who have these restrictions including Halal, vegan, vegetarian, Kosher, gluten-free, etc. The issue I have seen firsthand on campus is the visible lack of meal options for those of us with these diets. It is not easy to find affordable meals that are meat free or fit our needs that would be able to sustain our bodies for a long day of classes and meetings. I have seen how not having options has impacted many people and leads to skipping meals and thus mental and physical health problems affecting our academic goals. The work I am currently doing is informing campus administration and faculty about these issues in an effort to open up new dining options with more diverse meals. I want all students to be able to afford food that is sustainable for campus and for their diets, so no person has to face food insecurity.

About the Millennium Fellow

Anusha Malik is a junior studying Biochemistry at Florida Gulf Coast University (FGCU) pursuing medical school in the future. She is a first generation American-Muslim and advocates for stronger female Muslim representation in medicine. She aims to expand her campus's knowledge about her religion and culture to build a more diverse environment. Her passion about health and her religious community combine in goals to bring more food options to FGCU for those with dietary restrictions. She is working towards creating a campus that caters to all students' needs by implementing programs that focus on vegetarian, vegan, kosher, and halal food.
