UNITED NATIONS ACADEMIC IMPACT AND MCN PROUDLY PRESENT GRACE MARY WATSON, A MILLENNIUM FELLOW FOR THE CLASS OF 2025.
University College Dublin | Dublin, Ireland | Advancing SDG 3, SDG 12 & UNAI 3

" “Mar a chuirfeas tú a bhainfeas tú” is an Irish proverb meaning “you reap what you sow” or rather, "you get out what you put in". I believe that every action, effort and commitment no matter how big or small will make a difference. Working towards the SDGs requires effort from every level, and working with the UNAI allows me to do my part and plant my seeds. Although the work towards these goals may not result in immediate rewards, once obtained, the effects will be invaluable. The harvest gathered from this work is bound to be plentiful. This seanfhocail (old Irish saying) states that the efforts made today will have effects tomorrow and so on, leading to ripple effects. As such, becoming a Millennium Fellow gives me the opportunity to make waves, not just ripples. "
Millennium Fellowship Project: Onions Have Layers Childrens Storybook
Our group from one of my core Sustainability modules have made a book addressing food waste called "Onions Have Layers". We decided to make a book about it as the topic has been dealt with in many ways yet hasn't triggered an effective response. We decided on the target audience of young children as it will help foster a sense of respect and appreciation for our food system, this is starting from the root and hopefully growing a more sustainable generation that places value on the food we eat. We want to instill behaviors and habits around food waste in children to allow them to become educated about this matter from a young age. Our objective is to encourage a connection between people and nature, therefore placing value on the food produced and brought into Irish homes. We hope to achieve this by using a more systemic approach, which illustrates the importance of our strong connection to the earth, to encourage people to think differently about food waste.
About the Millennium Fellow
Grace Watson is an enthusiastic and driven individual whose care for the planet has shaped the way she has approached both life and her college education. Studying sustainability with environmental science in University College Dublin allows Grace the opportunity to expand her knowledge and understanding of the earth. Growing up beside the wild Irish coastline and within range of the pastural patchwork of rural Ireland, fostered a strong connection with nature from a young age. Now, whether learning about the geological construct of our planet or the society which inhabits its surface, Grace strives to deepen this connection with the natural world and the people who surround her.
